I remembered during my younger years, hotcake was my all time favorite street food. It was usually sold near schools and church. The authentic Filipino hotcake is cooked in a round waffle maker and is yellow in color due to the addition of food coloring. My version is cooked in a pan and without the food coloring but I think the taste is somehow close to the original. Try it and express your thoughts on the comment box below.
Ingredients:
- 1 cup Flour
- 6 tbsp White Sugar
- 1 tsp Baking Powder
- 1 Egg (beaten)
- 1 cup Evaporated Milk or Fresh Milk
- 1 tbsp Cooking Oil
- 1/8 tsp Salt
- Margarine
Procedure:
- In a large bowl, mix flour, sugar, baking powder, and salt.
- Pour in the milk, egg and cooking oil and mix until batter is smooth.
- Spray or grease the pan with cooking oil and heat in low fire.
- Use a ladle and pour batter into the pan.
- Flip once bubbles appear on the surface.
- Spread margarine and sprinkle with sugar.
Serves 2-3
