This is an Ilonggo style humba. It's sweet and sour and delicious! Of all the pork recipes, this is my favorite. Actually, this recipe is my husband's, and every time he cooks this, I'm always on a diet cheat day! Partner it with rice and surely it'll be hard to stop eating. Ingredients:
- 1 kg pork belly (sliced into cubes)
- 2 medium size carrots (sliced)
- 1 small can pineapple chunks
- 1 small can black beans
- 1 medium size bell pepper (sliced)
- 1 medium size onion (sliced thinly)
- 5 cloves garlic (minced)
- thumb size ginger (julienned)
- 1/2 cup ketchup
- 1/2 cup vinegar
- 6 tbsp oyster sauce
- 4 tbsp soy sauce
- 1 broth cube
- 1 tsp black pepper
- salt to taste
Cooking procedure:
- Boil pork until tender and fry pork on its own fat until brown. Discard excess fat.
- Saute garlic, onion, and ginger.
- Add the pork, broth cube, black pepper, black beans, soy sauce, oyster sauce, vinegar, ketchup and pineapple chunks. Mix and bring to a boil.
- Add bell pepper and simmer for 10 minutes.
- Add carrot, mix, and continue to simmer until the sauce thickens and absorbed by the pork.
- Sprinkle with salt to desired taste.
- Serve with rice.
