Tinolang Manok (Chicken Tinola) - ilonggo style

Tinolang manok is my number one comfort food. The simple taste of it makes me think of home and my grandparents's farm. It is best to eat during rainy or cold days when you want to feel warm and relaxed. 

This is an Ilonggo style tinola. Try it and let me know what you think.

My tinola, only without malunggay/chili leaves
because stores are not selling these leaves
here in Dubai =(


Ingredients:

  • 1 kg or 1 whole chicken, chopped
  • 1 green papaya, sliced
  • 1-2 stalks lemongrass, knotted
  • malunggay or chili pepper leaves
  • 3 green chili
  • 1 medium size onion, sliced
  • 4 cloves garlic, minced
  • 1-2 tomato, sliced
  • 1 medium size ginger, sliced
  • 2 tbsp soy sauce
  • 1 tbsp cooking oil
  • 1 broth cube
  • 3-4 cups water
  • salt & pepper to taste


Cooking Procedure:

  1. Heat oil in a pan.
  2. Saute the garlic, onion, tomato, and ginger.
  3. Add the chicken and cook until the color turns into light brown.
  4. Add soy sauce, broth cube, salt and pepper. Adding these while sauteing will add flavor to the meat.
  5. Pour in water and bring to a boil.
  6. Add the lemongrass and simmer for about 30 minutes.
  7. Add the papaya and green chili and simmer for 5 minutes.
  8. Add salt and pepper to desired taste. 
  9. Add the malungay or chili pepper leaves. Turn off the stove and let the residual heat cook the leaves.
  10. Serve hot and enjoy!
